Seems complicated and too prone to error given the investment, although I'd like to give it a shot sometime.
Is this RFT guy an actual food critic? I blows my mind that he's complaining about all the options and the "hard work". That's part of the fun! Duh! Sounds like he'd be more at home at Appleby's and TGI Fridays!
Maybe the choices are overwhelming for people who haven't ever had fondue (which is probably a lot of people). Maybe Simply Fondue should have 5 or 6 "most popular" combos?
Anyway Simply Fondue sounds like a nice addition to the downtown dining scene! I'd love to try this place next time I'm in town. Just for comparison's sake, fondue is really popular in NY, and $40 for 4 course dinner for 2 is extremely reasonable.
