I'd reasonably assume any animals would be put down as humanely as possible. First, there are the basic standards of humanity that involve not letting another animal suffer, and generally the avoidance of sadism & cruelty. Second, quality control. When animals die under duress, the release of stress-related neurotoxins leads to increased muscle activation and the buildup of lactic acid, which decreases the tenderness of the meat and can ruin a cookout. Best to take an animal down while it's completely unaware, quickly and without pain. Meanwhile, if they can do that as you described, but humanely, then maybe they could even have a Cajun Boucherie, which would be unabashedly awesome. Anthony Bourdain had one on his old show once. As guest of honor, he was given the honor/duty to put down the pig himself; single shot at close range, no suffering.
